Our vision for this beer was to marry an intense flavor profile reminiscent of an imperial stout with effortless drinkability. We used a number of specialty malts to impart notes of roasty malt, chocolate, and dried dark fruit. Although intensely flavored, this beer does not have the same mouth-filling, heavy qualities as its stronger, imperial-strength counterpart. Instead, the mouthfeel is decidedly less full, resulting in a drier finish with a lingering note of bittersweet chocolate. We also dry hopped this beer with an awesome new hop product called Provoak, which is made up of a proprietary blend of pelletized, low-alpha hops that incorporate granulated toasted American oak to impart a subtle barrel-aged character to the flavor profile.
